Ahn (安) firmly belongs to the second category — and it’s all thanks to one dish: their dakgalbi.

I’d heard whispers about this place from friends who kept saying the same thing over and over: “You have to see the pan.” I assumed they were exaggerating. They were not.

First Impressions

Walking into Ahn, the atmosphere immediately sets the tone — warm lighting, the low hum of sizzling pans from nearby tables, and that unmistakable aroma of gochujang and roasted sesame oil drifting through the air. It’s the kind of place that feels both cozy and a little exciting, like you know something good is about to happen.

We were seated quickly, greeted with genuine warmth by the staff, and handed menus that read like a love letter to Korean comfort food. But we already knew what we came for.

The Main Event: Dakgalbi

When the dakgalbi arrived, the entire table went quiet for a second. The pan was massive — easily one of the largest cooking vessels I’ve seen brought to a table, and it came packed to the brim.

Inside: generous portions of marinated chicken thigh, glistening rice cakes (tteok), thick-cut cabbage, sweet potato chunks, and a scattering of scallions, all coated in a deep red, gochujang-based marinade that looked as good as it smelled. The staff set it directly on a portable burner at our table, and within minutes it was bubbling away, filling the air with that irresistible sweet-spicy-smoky scent.

Watching it cook is genuinely part of the experience. The edges of the sauce began to caramelize against the pan, the chicken turned glossy and tender, and the rice cakes softened just enough to become perfectly chewy. By the time our server gave it the final toss, we were practically leaning over the table in anticipation.

The Flavor

The chicken was the star — incredibly tender, having clearly soaked in that marinade long enough to absorb every bit of smoky, spicy, slightly sweet flavor. It wasn’t just spicy for the sake of being spicy; there was real depth here, a balance of heat, sweetness, and umami that built with every bite rather than overwhelming the palate.

The rice cakes deserve their own paragraph, honestly. Chewy, slightly caramelized on the outside from sitting in the pan, they soaked up the sauce beautifully and became almost addictive — the kind of thing you keep reaching for even after you’ve told yourself you’re full.

The cabbage and sweet potato added texture and a touch of natural sweetness that cut through the spice, while the scallions gave everything a fresh, sharp finish.

The Grand Finale: Fried Rice

If you’ve never had dakgalbi before, here’s a tip: do not skip the fried rice.

Once the meat and vegetables are mostly gone, the server (or you, if you’re hands-on) scrapes the remaining sauce and bits into a base for fried rice — rice, seaweed flakes, sesame oil, and whatever flavorful residue is left clinging to the pan. It’s cooked right there, pressed down to develop a crispy, golden crust on the bottom.

Somehow, impossibly, this fried rice might have outshone the dakgalbi itself. It’s smoky, slightly crunchy in the best places, and carries all the concentrated flavor of everything that came before it. We scraped that pan clean.

The Overall Experience

Beyond the food itself, what made this meal memorable was the experience of it. Dakgalbi at Ahn isn’t just a dish — it’s a shared, interactive event. Watching it cook, tossing it together, portioning it out for each other — it turns dinner into something communal and a little theatrical, in the best way.

Portions were generous enough that our table left comfortably full (and with definite regrets about not saving room for more). Service throughout was attentive without being intrusive, with staff checking in on the pan’s progress and offering to help with the final toss and fried rice finish.

Final Verdict

Ahn (安) has set a new bar for what I expect from dakgalbi. The massive pan, the perfectly balanced marinade, the theater of watching it cook, and that unforgettable fried rice finale — every part of this meal was intentional and satisfying.

If you’re looking for bold, comforting Korean flavors served with a bit of spectacle, this is the place. I’m already planning my next visit — and next time, I’m bringing a bigger group so I have an excuse to order more.

Rating: ★★★★★

There are restaurants you visit, and there are restaurants you remember.
